Kuramoto Ice Cubes
We move close to a dozen cases of Kuramoto cube ice a week, which makes us the biggest retail seller of it in Melbourne. It's made by a family business in Kanazawa that's been making ice since 1923, frozen slowly over 48 hours and agitated the whole time to push out microbubbles as it forms. What lands in your glass is dense, clear ice with nearly zero impurities, cut into a 50mm cube sized for a rocks glass. Some bars trim the corners into a brilliant-cut diamond before it reaches the drink. It's built for whisky and spirits, not for topping up a jug.

Which size, and why some bars cut it like a diamond
Cube S measures 50 x 50 x 50mm, with twelve pieces per pack. Cube M is 50 x 50 x 65mm, with nine to a pack. Both come in ten packs per case. At that size, the ice holds its shape through an entire drink rather than watering it down by the second pour. The trimmed-corner treatment some bars ask for is purely a presentation call: it turns a plain cube into something closer to a cut diamond in the glass, and the ice underneath is identical either way. If your bar already orders our custom ice stamp, the same Cube M or Cube S takes a logo or monogram pressed into the face.
Why Melbourne's whisky and spirit bars reach for it
